Need to eat more fruits and vegetables?

Need to eat more fruits and vegetables? If so, have some Cabbage and Apple Salad 

Just talked to one of my night time classes about nutrition and the need to eat more fruits and vegetables....and how as Okies we are next to last in consumption. This is a great little Blog written by the mom of one of the families that came to our "Platt my Plate" event in the fall.


She has 4 six year old girls and does a great job making healthy meals for her family.

Shirred eggs with Black-Eyed Pea Salsa and Collard Greens

Looks like a great New Years dish...One of my Aunt's is from Louisiana, and I grew up eating Black Eyed Peas on New Years Day..I was told they would bring me good luck. The practice of eating the peas on New Years for good luck is a Jewish custom. In 1730 a group of Sephardi Jews immigrated to the US and settled in Georgia where they still reside today. The practice was adopted by many southerners about the time of the Civil War.
