Shirred eggs with Black-Eyed Pea Salsa and Collard Greens

Looks like a great New Years dish...One of my Aunt's is from Louisiana, and I grew up eating Black Eyed Peas on New Years Day..I was told they would bring me good luck. The practice of eating the peas on New Years for good luck is a Jewish custom. In 1730 a group of Sephardi Jews immigrated to the US and settled in Georgia where they still reside today. The practice was adopted by many southerners about the time of the Civil War.
